PRODUCTION METHOD:<\/strong> TASTING NOTES:<\/strong>
\nManual harvest, maximum attention to collection and production temperatures with extensive use of inert gases to avoid oxidation. Soft pressing to obtain the juice, then held for 48 hours at low temperatures for clarification; this is followed by fermentation in steel tanks at controlled temperature until all the sugar is exhausted. Rests in steel for 6 months and 3 months in bottles.<\/p>\n
\nThe bright greenish-yellow luminous tones range from floral hawthorn to nectarine and lime, acacia scents and herbs; all the fragrances are well-defined and linked.
